I have been using an iPad Pro to lecture at Monash since 2016. It is a very nice experience not only for me but also to the students. I have tried two apps--GoodNotes and Notes Plus and I am sharing with you my experiences. You should not use Notes Plus for teaching purposes, instead use GoodNotes. It is because GoodNotes is simpler and you would not run into an embarrassing situation when somethings unexpectedly happens. And there is no fullscreen without the app toolbar. Having said that it is easier to organise stuff with Notes Plus.
